Chocolate Coconut Pancake Recipe with Coconut OIl

     If you’re not already using Coconut Oil in your daily routine, then you’re definitely missing something. There are so many uses for Coconut Oil that the possibilities seem endless. I personally use it many different ways am impressed with how well it performs. In fact, I have a jar in the kitchen, bathroom and nursery!
    I first learned about Coconut Oil from other cloth diapering parents. Cloth diapering you say? Traditional diaper creams, often used with disposable diapers, are not ‘cloth diaper safe’ and may contain ingredients that don’t wash out of fabric in the laundry. This can ruin precious and/or expensive cloth diapers. In addition, products used in diaper creams can be synthetic and contain chemicals. Many parents I know are turning to natural and cloth-diaper safe alternatives as a result. Low and behold; when I looked at the ingredients in our ‘cloth diaper safe cream’ there it was….Coconut Oil!


    When I bought my first jar of Coconut Oil I immediately felt good about using it because unlike other products, there are no surprise ingredients! A natural single-ingredient product like Coconut Oil contains exactly what it claims to contain. Unlike some products that are labeled ‘natural’ but tote a list of unnatural ingredients, Tropical Traditions coconut oil contains… guessed it….Coconut Oil!! I’m so proud of our gold label quart that I want to shout it from the rooftops – figuratively speaking of course.

     Growing up with Italian heritage, I was encouraged to and enjoyed using olive oil on my skin and hair, but didn’t care much for the smell. Coconut oil on the other hand, smells like coconuts….because it comes directly from coconuts!! I personally use it as a moisturizer for my skin and hair, and love doing a post-bath baby massage on my children. I even used it as a ‘belly oil’ during my pregnancies. There are so many uses for coconut oil that once you start using this fantastic product, you will keep discovering how wonderful it is. I do believe that it is the proverbial genie in a bottle. 
    After discovering coconut oil recipes on pinterest (yes I love pinning!), I started thinking about how I could use coconut oil while cooking at home. My family loves pancakes at any time of day and especially as a treat for dinner. I often experiment with adding different ingredients and through trial and error developed this desert pancake! I’ll share it with all of you here. After I put it on paper I thought.. ‘wow, that ingredient list looks long’; but have no fear – it’s easy and delicious!

Mama Banana’s Chocolate Coconut Pancakes

Here is a list of ingredients for a family portion size, cut the recipe in 1/2 for less pancakes, or refrigerate the batter for the next morning (but not longer then 24 hours).


2c Organic Flour
2tsp Baking Powder
4 tbsp Unrefined organic sugar
1 tsp Sea Salt
2 tbsp Coconut Oil
2 large Organic Eggs
2c organic Soy milk (or cow)
1c Organic coconut flakes
2/3c Chocolate chips
1/4 tsp Organic cinnamon
Extra coconut oil for frying pan


1. Whisk dry ingredients together in a bowl.
2. Slowly whisk in wet ingredients until mixture is a honey consistency. You may or may not need all of the milk, you may need more. Depending on the size of the eggs, temperature of your house the consistency of your pancake batter will vary. It’s important to keep an eye on consistency. For a thicker cake like pancake batter should be like honey, for a thinner pancake it should be like a thick nectar juice.
3. Mix in Coconut flakes and Chocolate! Re-evaluate consistency of pancake mix.

Coconut oil is solid at room temperature and may need to be warmed a bit to liquefy and mix into batter. Keeping the oil on the counter is enough to liquefy it for me. I used troppical traditions here, but there are many good brands, my favorite is Best Body.

4. Turn pan onto medium heat. Use a silicone brush to coat pan with Tropical Traditions Virgin Coconut Oil; Gold Label.(This eliminates the need for synthetic pan sprays that may contain chemicals or other non-natural ingredients).
5. Once pan has finished warming pour in batter to desired pancake size. Semi-cover with lid to ensure pancake cooks throughout.

6. Lightly brown pancake on each side, if pancake is large it will often crack when flipped allowing you to ensure that it’s cooked throughout by peeking inside.

7. Eat! These pancakes are so decadent that my family typically eats them plain. However, you may want to use some maple syrup or top with whipped cream and a drizzle of chocolate sauce.

See, easy right?! Perfect every day or special occasion pancakes. Plus I spread some of the coconut oil on my hands when I’m done. I do suggest that if you use one jar for multiple purposes that you don’t stick your fingers in, but instead use a spoon or other safe device to get the oil out. This will prevent the oil from getting contaminated and saying food safe.
